The butterfly cut is basically two branzino fillets held together along the back or bottom. This makes for a beautiful presentation and allows you to stuff the fish with lemon, herbs or whatever ingredients work for your cuisine. Branzino is a light, sweet, semi-delicate white meat fish and is great to grill, bake or cook in a pan. All US available branzino is farm raised and most of our branzino hail from Greece or are raised closeby in the Mediterranean, though we also carry indoor tank raised branzino when available. ————— For shipping (not delivery) - please select any shipping option that is 2 days or less.
